Broccoli and Orange Salad

The broccoli and orange salad is a new option to offer as a tasty and cheerful winter side dish, perfect to present at the table. It’s not the usual monotonous broccoli side dish. Simply boiled and seasoned with oil and garlic, but it has something extra, something noticeable: the pairing with the orange. Believe me, a rather successful touch for visual effect and interesting taste due to the contrast. The orange sweetens the bitterness that is characteristic of broccoli. Often, in a derogatory way, I’ve heard it said about people as well: “You’re such a broccoli.” I really hope that after tasting this side dish, this vegetable, which I consider exquisite, will no longer be despised by anyone. 🙂 The broccoli is flavored with orange peel and juice.

Broccoli and Orange Salad

Ingredients

  • 1.1 lbs Broccoli
  • 2 Oranges
  • 1 cup cups Black Olives
  • to taste Extra Virgin Olive Oil
  • to taste Salt

Preparation

  • Clean and cut the broccoli into florets and wash with abundant water. Boil in a pot with water and salt for about 7-8 minutes from the boil and drain.

  • Grate the peel of one orange. Peel the segments and cut into pieces. Squeeze the other orange.

  • Then season the broccoli side dish with juice, grated peel and peeled orange pieces, black olives, and a drizzle of extra virgin olive oil.

  • Finally, enjoy the broccoli and orange salad with its strong and contrasting flavors, pairing it with fish or white meat main courses. It’s an interesting recipe to discover, a novelty to bring to the table as a sweet and sour side dish different from the usual.

Leave the broccoli soaking for ten minutes in salted water before cooking them,
