Pressure Cooker Caramelized Onions, a quick and tasty side dish, to accompany roasts, cheeses, or perfect for making delicious bruschetta. The recipe is very simple to make, like the pan caramelized onion recipe, but much faster and with some ingredient modifications.

For today’s version, in fact, besides using a different cooking method, I used apple cider vinegar instead of balsamic. An alternative that everyone at home really appreciated and that I will definitely replicate to accompany the appetizer next week, because I’ll have friends over for dinner.

For this recipe, I also used red onions, but you can easily use white ones too. We enjoyed this goodness on bruschetta with spreadable cheese, but they are also great for enriching a sandwich. Ingredients

  • 1 lb red onions
  • 1.5 tbsp extra virgin olive oil
  • 2 tbsp brown sugar
  • 3.5 tbsp apple cider vinegar
  • 3.5 tbsp water
  • salt (to taste)

Steps

  • First, clean the onions. Peel them and slice them thinly. Then sauté them for a few seconds in the open pot with the oil, stirring. Then add the vinegar, let it evaporate, and then add the brown sugar and water.

    Adjust the salt and close the pot, bringing it to maximum power. As soon as it reaches the first ring, lower the flame and cook for 1 minute. If you do not have a pot like mine, cook on the smallest burner on a very low flame. Obviously, cooking times are relative and depend on the type of pot you have.

    In any case, onions do not need long cooking times, especially since they are thinly sliced. After the cooking time, gradually release the steam and open the pot. If the onions have released a lot of water, let them dry over high heat for a few seconds. For me, it wasn’t necessary.
