Berry Tiramisu Without Eggs

Berry Tiramisu, a simple and delicious spring dessert, perfect for concluding a dinner or lunch with friends and family. A variant of the classic tiramisu, but without eggs, making it perfect for those who are intolerant or allergic.

In this version, I used cream together with mascarpone, for an incredibly delicious cream. Instead of coffee, a puree made with strawberries and raspberries: the true stars of this tiramisu. Creamy and absolutely delicious, it will be impossible to resist the temptation to finish it immediately, and I won’t even begin to describe its aroma!

As an alternative to cream, you can also make this dessert using the classic mascarpone cream with pasteurized eggs. In both cases, it will be a delicious dessert perfect for this spring season. Ingredients

  • 5.25 oz ladyfingers
  • 1 cup heavy cream
  • 8.82 oz mascarpone
  • 1/2 cup powdered sugar
  • 1 cup strawberries
  • 3/4 cup raspberries
  • mint (as needed for garnish)

  • 2 tbsp lemon juice

Steps

  • First, prepare the soaking mixture. Wash the raspberries and strawberries and then pat the fruit dry with paper towels. Remove the green part of the strawberries and cut them into chunks. Then transfer the fruit to a blender with the sugar and lemon juice.

    Blend until you get a smooth and homogeneous puree. Transfer it to a bowl and set aside. Then wash the remaining fruit, which you will use to fill and garnish the tiramisu, and cut the strawberries into small pieces and the raspberries in half. Set these aside as well.

    Now prepare the cream. Pour the cold refrigerator cream and powdered sugar into a bowl and whip the two ingredients with an electric mixer. For this recipe, do not over-whip the cream: it should be semi-whipped.

    Now add the mascarpone and continue to work the cream with the electric mixer until it is incorporated. You will obtain a smooth and fluffy cream.

    Now soak the ladyfingers in the soaking mixture prepared earlier and place them side by side at the bottom of a baking dish. Then spread a layer of mascarpone and cream and add some fresh fruit pieces.

    Then make another layer with the ladyfingers soaked in the mixture and then spread more mascarpone cream and more fresh fruit. Continue like this until all the ingredients are used up. Spread a bit of fruit puree on the last layer before adding the chopped fresh fruit. Then place in the refrigerator to rest for 1 hour.
