True, I don’t prepare many recipes with fish because those who know me know that I don’t like cleaning it. Ingredients

  • 9 oz egg tagliatelle (fresh)
  • 11 oz langoustines
  • 3 oz robiola cheese
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 1 oz brandy
  • pistachio crumbs (to taste)
  • salt (to taste)

Steps

  • First, clean the langoustines. I left 4 whole with shells for plating, while I removed the shells from the others for the sauce. Cut along the back of the shells and remove the black vein with a toothpick. Then set aside 4 langoustines and remove the head and shell from the others. Of course, don’t throw away the scraps, as you can use them to make fish stock and freeze it in single portions for future use. Finally, rinse the fish well under water and drain it.

  • Cook the tagliatelle in plenty of salted water for the cooking time indicated on the package. Then clean the garlic and brown it in a pan with the oil. Add all the langoustines and brown them in the pan for a few moments over high heat. Deglaze with brandy and let the alcohol evaporate.
    Season with salt and cook for a few minutes, stirring occasionally and without letting the sauce dry out too much. Remove the whole crustaceans and transfer the others into a blender glass, along with all the cooking juices, and blend. Then transfer the blended fish back into the pan with a bit of pasta cooking water. Add the robiola cheese and mix. Then also add the pistachio crumbs and mix again, so that all the ingredients are well combined.
    Drain the tagliatelle and transfer them to the pan with the sauce. Toss them for a few moments, adding a bit more pasta cooking water if necessary.
