Ingredients

  • 1 roll puff pastry (round)
  • 1 lb potatoes (weight before peeling)
  • 2 1/2 oz cooked ham (diced)
  • 5 tbsp grated Parmesan cheese
  • 5 oz fontal cheese

  • pepper (to taste)
  • 1 egg

Tools

  • High-sided saucepan

Steps

  • First, clean the potatoes. Peel them with a potato peeler and rinse them thoroughly under water to remove any soil. Then, cut them into cubes and cook them in plenty of salted water for 8 minutes. They should be soft.

Drain them and transfer them to a bowl. Mash them with a fork until puréed and let them cool slightly. Season with salt and pepper and add the grated cheese and cooked ham. Mix well.

Separately, cut the fontal cheese into cubes, add half to the potato and ham mixture, and stir. Unroll the puff pastry and place it with its parchment paper in a baking dish with a diameter of 9.5 inches (24 cm). Press the edges well and prick the bottom with a fork.

Next, spread the potato and ham mixture and add the remaining cheese cubes over the entire surface. Fold the edges of the puff pastry inward and brush the surface of the edge with a beaten egg.
