For this version, I used frozen broccoli, pumpkin, and fennel. All autumn vegetables perfect for this period. Flavored with grated cheese, breadcrumbs, and paprika, I cooked them in the air fryer. Of course, you can also make this recipe by baking the gratinated vegetables in the oven, extending the cooking time.

- 8.82 oz frozen broccoli
- 8.82 oz pumpkin
- 7.94 oz fennel
- 2 tbsp extra virgin olive oil
- 1.41 oz grated Parmesan cheese
- 2.12 oz breadcrumbs
- salt (to taste)
- pepper (to taste)
- smoked paprika (to taste)

Steps
First, clean the pumpkin. Remove the skin and seeds and cut it into cubes not too large. Also, clean the fennel by removing the ends and the outer tougher leaves. Cut them into quarters and wash them very well under water to remove any soil residues.
Then drain them and transfer them to a bowl with the pumpkin and frozen broccoli. Alternatively, you can also use fresh ones, after dividing them into florets and washing them. Season with salt and pepper and add the oil.
Also add the breadcrumbs, grated cheese, and paprika and mix so that all the ingredients blend perfectly. Transfer the vegetables to the fryer basket and cook at 374°F for 15 minutes, stirring halfway through cooking.
The gratinated vegetables in the air fryer are ready to be served at the table.
