Sweet and Sour Vegetables in Air Fryer

The sweet and sour vegetables in air fryer are a simple and tasty side dish, perfect to accompany meat or fish main courses. A variant of the recipe for colorful pan-fried vegetables, equally quick to prepare.

For this recipe, you can use the vegetables you prefer. I used eggplants and bell peppers. After cleaning the vegetables and cutting them into chunks, I mixed them with a blend of sugar, vinegar, and oil. It is this combination of vinegar and sugar that makes these vegetables sweet and sour. I like them a lot, and they were very much appreciated by my husband and Francesca. A little less by the youngest in the house, but she is known to be a bit more difficult to please.

To season the vegetables, I added aromatic herbs: thyme and marjoram. Of course, you can use herbs of your choice. This way, you can add less salt and get a healthier side dish. The air fryer will then make these vegetables crispy, and they will be ready in a few minutes. Curious to find out how to prepare them? Then I leave you the recipe below because the sweet and sour vegetables in air fryer will be ready in a click!
