Soft and Tasty Buffet Mini Pizzas

Buffet mini pizzas, a delightful finger food that cannot be missed at an appetizer or birthday party. They are just a lighter version of fried mini pizzas, equally simple to prepare. You can also prepare them in advance, as they remain soft even the next day and can be frozen to have them ready when needed.

They are made with a moderately hydrated dough that can be worked by hand, without the need for a mixer. Besides the classic ingredients used for pizza like flour, yeast, and water, I’ve replaced part of the liquid with milk. This way, they will remain soft even the next day. The red mini pizzas are prepared really quickly. After the usual resting hours for leavening, they bake in the oven for just a few minutes. Moreover, they are delicious hot, warm, or cold.

I topped them in a classic way with tomato and mozzarella, but you can vary the toppings according to your taste. You can grill some vegetables and add them after cooking. Alternatively, you can use only cheese or only tomato, add some olives, or anchovies. In short, a recipe to customize based on your tastes and needs. Ingredients

  • 2 3/4 cups all-purpose flour
  • 2/3 cup water
  • 2 tbsps milk
  • 1 tsp dry yeast
  • 2 tbsps extra virgin olive oil
  • 2 tsps salt
  • 3/4 cup tomato puree (rustic)
  • extra virgin olive oil (to taste)
  • salt (to taste)
  • dried oregano (to taste)
  • 1 1/4 cups pizza mozzarella

Steps

  • Pour the water, milk, dry yeast, and oil into a sufficiently large bowl and mix with a spoon. Then add the flour and mix again. Once the flour has absorbed the liquids, add the salt and start kneading by hand for at least 10 minutes on a work surface until you get a smooth and homogeneous dough ball.

    Then place the obtained dough in the bowl, cover with plastic wrap, and let it rise for at least 3 hours or until the volume doubles.

  • After the rising time, take the dough and flip it onto a work surface. With the help of an espresso cup, cut out 8 balls weighing 75 g each. Flatten each ball and bring the edges towards the center. Roll them with the back of your hand and place them on a baking tray lined with parchment paper.

    Cover with a cloth or plastic wrap and let them rise for another 30 minutes. Meanwhile, put the tomato puree in a bowl and season with oil, salt, and oregano and mix. Then cut the mozzarella into small pieces. You can help yourself by grating it with a grater with large holes. Take the dough balls and flatten them with your fingertips and top them with one or two tablespoons of tomato puree.

  • Then bake in the oven at 482°F (250°C) for 10 minutes with static function in the lower part of the oven. Remove the tray, add some mozzarella on each mini pizza, and put it back in the oven at 482°F (250°C) with static function for another 10 minutes, or until the mozzarella has melted.

Storage and Tips for Buffet Mini Pizzas

You can keep the mini pizzas in a cool, dry place for 1 or 2 days. It is also possible to freeze them and put them in the oven for a few minutes when needed.
