Ingredients
- 4 slices sandwich bread
- 1 red pepper
- 3.5 oz smoked salmon
- 1/4 cup mayonnaise
- arugula (to taste)

Steps
First, clean the pepper. Wash it well under water and dry it with kitchen paper. Then place it as it is in the fryer basket and cook it at 375°F for 15 minutes. Turn the pepper over and continue cooking for another 5 minutes. Alternatively, you can roast the pepper in the oven at 355°F for 30/40 minutes. After cooking time, let it cool inside the fryer.
Once cooled, take the pepper and remove the skin. Also remove the stem, seeds, and internal filaments. Then cut it into four parts. Spread a teaspoon of mayonnaise on each slice of bread. Then place some arugula leaves and 1.75 oz of salmon for the first sandwich. Then add half of the cut pepper and close with another slice of bread.
Cover with cling film and let it rest for 30 minutes in the refrigerator. The resting time will help you cut the sandwich more easily. Then proceed the same way with the other two slices of bread.
After the resting time, take the sandwiches and cut them in the two diagonals. This way, you will have 8 smaller ones. The sandwiches with peppers and smoked salmon are ready, enjoy your meal!
