The savory puff pastry braid is a simple and delicious rustic dish, perfect to serve as an appetizer or for an everyday dinner. Just like the savory strudel with speck, zucchini, and taleggio, this puff pastry rustic is quick to prepare and will surely be enjoyed even by the little ones at home.
Giorgia practically devoured it in a few minutes, without even noticing that her hated zucchini were inside. Besides zucchini, I used cooked ham and scamorza which will become super stringy after baking, making it really hard to resist. You can replace the ham and scamorza with other deli meats and soft cheeses of your choice.
For this version, I added raw zucchini along with the other ingredients. I recommend slicing them quite thinly to facilitate cooking in the oven. Alternatively, you can quickly sauté them in a pan with some oil and garlic. In the latter case, let them cool before placing them on the puff pastry. Curious to find out how to make it? Then let’s head to the kitchen because the savory puff pastry braid will be ready in a click!

Ingredients
- 1 sheet puff pastry (rectangular)
- 1 zucchini (small)
- 4 oz cooked ham
- 6 oz scamorza
- 1 egg yolk
Tools
- Baking Tray
- Cutting Board
- Knife
Steps
First, wash the zucchini very well and dry it with paper towels. Then, remove the ends and slice it rather thinly. Also slice the scamorza. Unroll the puff pastry, keeping it on its parchment paper, and place 2 slices of ham in the center. Then, distribute the slices of scamorza on top of the ham, followed by the zucchini slices.
Finally, finish with two more slices of ham. Now, cut the sides of the puff pastry with a knife and bring them towards the center to cover the filling. Seal the ends well and brush the surface with a beaten egg yolk. If you are intolerant or allergic, you can use milk.
Place the puff pastry strudel on the baking tray and bake in a preheated oven at 350°F for 30 minutes with fan setting. Once the puff pastry braid is cooked and golden on the surface, remove it from the oven, let it cool for a few moments, then slice and serve.
