The baked salmon en papillote is a simple and tasty fish main course, perfect for special occasions or for an everyday dinner. A really easy recipe that you can prepare in advance and then bake the papillote right before serving.
It is nothing more than a variation of the air fryer gratinated salmon, equally light and delicious. To prepare this recipe, I used an emulsion of chopped garlic and chili pepper, chives, oil, and lemon juice. Once the fresh salmon piece is placed on a sheet of baking paper, I spread this emulsion over the entire surface and closed the paper to form the papillote, also using some kitchen twine. Cooked in the oven, but you can also cook the salmon in a pan or an air fryer.

Ingredients
- 4 fillets salmon
- 2 tbsps extra virgin olive oil
- 4 cloves garlic
- 1 fresh chili pepper
- 1/2 lemon juice (plus zest to taste)
- chives (to taste)
- salt (to taste)

Steps
First, remove any bones with kitchen tweezers. Clean and chop the chives and garlic cloves. Then deseed the chili pepper and chop it finely. Transfer all the ingredients into a small bowl and also add the zest and juice of half a lemon. Finally, pour in the oil and mix.
Place each salmon fillet on 4 different sheets of paper and salt them. Distribute the previously prepared emulsion. Then close the sheets candy-style to form a papillote and seal the ends with kitchen twine.
Place the papillotes on a non-stick baking sheet and bake in a preheated oven at 356°F for 25 minutes with static function.
The baked salmon en papillote is ready! Remove the twine and serve the hot papillote with potatoes as a side dish.
