Preparing parmesan baskets
Grate the Parmigiano Reggiano cheese using a small-hole grater and collect it in a bowl. It will take about one tablespoon per person.
Take a non-stick pan and put it on the stove. Cut a square of parchment paper at the base. Put a tablespoon of parmesan, forming a disk on the parchment paper.
When the parmesan starts to brown, using the parchment paper, flip the wafer onto the bottom of an inverted glass or bowl. It is not necessary to grease them as the fatty part of the cheese will make the wafers non-sticky. Using a cloth so as not to burn yourself, adhere the cheese to the glass or bowl to give it a more compact shape. Remove the parchment paper, which can be reused, and let cool.
