Ingredients for making smart spiced cookies
- 1 1/2 cups all-purpose flour
- 1 egg
- 1/2 cup butter
- 1/3 cup sugar
- 1 teaspoon lemon extract
- 1 teaspoon orange extract
- 1 teaspoon vanilla extract
- 1 teaspoon honey
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 pinch salt
- 1/3 cup powdered sugar
- as needed lemon juice
Steps
In a bowl, place the softened butter. Add lemon and orange extracts (or grated zests), vanilla extract, honey, cinnamon, and ginger. Add the sifted flour and work it with your fingertips.
Add sugar, salt, and the egg. Knead first in the bowl and then on the work surface until you get a homogeneous dough. Roll it over granulated sugar on the work surface to form a long log. Wrap it in plastic wrap and place it in the freezer for at least 30 minutes.
After the resting time, remove the plastic wrap from the dough and cut the log into slices. The cookies are ready to be baked on a baking sheet lined with parchment paper at 350°F for about 20 minutes. Let them cool completely.
Mix the powdered sugar with a little filtered lemon juice, just enough to achieve a thick cream. Use a piping bag or syringe to decorate the cookies as you like. Let the icing dry and share them with loved ones.
Storage
Store in a tin box for a few days.
