The ricotta fritters are a very soft variant of the typical Carnival treats, also known as tortelli. An easy and delicious recipe perfect for a themed party that will tempt both adults and children. To prepare them, you’ll need a bowl and a spoon. For these fritters, you won’t need to knead by hand, as the dough is mixed with a simple spoon.
With the help of two teaspoons, small balls are formed and then fried in plenty of seed oil. Yes, they are not baked but fried. In my version, the dough is made with ricotta instead of butter, and you can also enrich it with chocolate chips or raisins, or leave it as is. To flavor these fritters, I added orange zest, but you can also replace it with lemon zest or vanilla.

Ingredients
- 8.8 oz ricotta
- 2 eggs
- 3/4 cup sugar (plus more for the final coating)
- 2 1/8 cups all-purpose flour
- 2 tsp baking powder
- orange zest (to taste)
- seed oil (as needed for frying)

Steps
First, put the ricotta in a bowl along with the zest of an untreated and washed orange. Then add the sugar and eggs and start mixing with a spoon. Next, add the flour and baking powder and continue to mix with the spoon until a smooth and sticky mixture is obtained.
Separately, heat plenty of seed oil in a pan. Using 2 teaspoons, scoop some of the mixture and form balls. Once the oil is hot, drop them in and fry until they turn golden. Then drain them on paper towels and coat them with granulated sugar.
