Ingredients
- 1 cup tomato puree
- 1/2 white onion
- 1 clove garlic
- 2 tsp extra virgin olive oil
- 2 tsp brown sugar
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- smoked paprika (to taste)
- chili powder (or fresh to taste)
- fresh coriander (to taste)

Steps
First, clean and chop half of the onion. Then peel the garlic clove and chop it as well. Put everything in the pan with the oil and chili pepper and sauté for a couple of minutes over low heat. I used chili powder for this recipe, but if you can find fresh chili, even better.
When the onion and garlic are slightly golden, add the spices: turmeric, coriander, cumin, and paprika. Toast the spices for a couple of minutes on low heat and then add the tomato puree. Then also add the brown sugar and cook the sauce for 10 minutes with the lid on low heat, stirring occasionally to prevent the bottom of the pot from sticking.
After the cooking time, remove the lid and serve the sauce with fresh chopped coriander as an appetizer or aperitif, or alternatively, use it to accompany other Indian recipes.

Tikka Masala sauce can be stored in the refrigerator in a covered container for one or two days.
