Ingredients for preparing creamy and stringy pasta with pumpkin
- Half pumpkin
- 12.3 oz small pasta
- 2 tablespoons minced celery, carrot, and onion
- 3 tablespoons extra virgin olive oil
- 4.2 cups vegetable broth

Steps for preparing creamy and stringy pasta with pumpkin
Wash the pumpkin and cut it into quarters. Remove seeds and strings and steam it. When it is soft, let it cool and take the pulp. Mash it with a fork. If there are any pieces left, that’s fine.
In a casserole, sauté the minced celery, carrot, and onion. Add the pumpkin pulp and let it flavor. Also add the small pasta and mix. Cook the pasta by gradually adding the hot broth and stirring often as you would with a risotto. I generally salt the broth, if you don’t, remember to salt.
When the pasta is almost cooked, remove it from the heat. Add the Montasio (or stringy cheese of your choice) in pieces, pepper, and parsley. Stir and let stand for a few minutes, enough time to melt the cheese. Serve it with a drizzle of raw oil and, if you like, a final sprinkle of pepper.
Storage
You can store the pasta in the fridge for a couple of days.
