The baked spinach is an easy and quick side dish to prepare. A cheesy and creamy recipe, perfect for those who want a light side dish without sacrificing flavor. Great for accompanying meat and deli meats, it is prepared in just a few minutes with few ingredients.
After cooking the spinach in a pan, you just need to bake them for a few minutes with plenty of mozzarella and grated cheese on top. This way, a delicious and tasty crust will form on top. For this recipe, I used frozen spinach to save time, but you can also use fresh spinach if you prefer. Additionally, you can choose to blanch them in boiling water or cook them in a pan with onion, as in my recipe. Surely in this way, you will have even more flavorful spinach.
An ideal preparation for a last-minute dinner or to get the little ones in the house to eat vegetables. For this recipe, you can also use other leafy greens: chard, Swiss chard, or rapini. Ingredients
- 32 oz spinach, frozen
- 2 tbsp extra virgin olive oil
- 1 white onion
- 2/3 oz grated Parmesan cheese
- 5 oz mozzarella for pizza
- salt (to taste)
- pepper (to taste)

Steps
First, clean and chop the onion. Then sauté it in a pan with the oil and, once it has softened, add the frozen spinach. Season with salt and pepper and cook covered over low heat for about 8 minutes.
After the cooking time, remove the lid, and if they seem a bit watery, increase the heat and cook for a few moments until they have absorbed all the cooking water they released.
Let them cool slightly and then transfer them to a baking dish. Then sprinkle with grated cheese and diced mozzarella. Bake in a fan oven at 350°F for 10 minutes, or until the mozzarella is melted and a crust forms on the surface.
The baked spinach is ready! Serve immediately, right out of the oven.

Baked spinach is best if consumed immediately after cooking. Alternatively, you can store it in the refrigerator for one or two days and heat it in the microwave for a few minutes.
