The shrimp with brandy is an appetizer but also a very simple and unique main course, perfect for the holiday season. A recipe that takes very little time to cook, because shrimp cooks quickly.   • 1 tbsp extra virgin olive oil
  • 2 tsp butter
  • 2.5 tbsp brandy
  • 1 clove garlic
  • 0.25 cup orange juice
  • orange zest (to taste)

Steps

  • First, take care of cleaning the seafood. Those who know me know that I don’t particularly like doing this, but shrimp clean really quickly. For this recipe, I left them whole, with head and shell, but if you prefer, you can remove the head and use the rest for the recipe. Of course, in this case, use the head to prepare a good fish broth. Then cut the shrimp’s back with a pair of scissors and with the help of a toothpick remove the black thread: the crustacean’s intestine. Then rinse them very well under running water, drain them and pat them dry with some kitchen paper.

    Grate the zest and squeeze the juice of an orange and set it aside. Now, heat the oil in a non-stick pan and briefly sauté the garlic clove in its skin. Then add the previously cleaned shrimp and sear them over high heat for a few minutes. Then deglaze with the Brandy, let the alcohol evaporate, and add the orange juice. Lower the heat, season with salt and pepper, and cook the shrimp for 8 minutes on low heat, stirring occasionally.

    After the cooking time has elapsed, turn off the heat, add the orange zest and chopped parsley, and stir with a wooden spoon until the ingredients are combined.
