- 1/3 cup grated Parmesan cheese
- 5.3 oz ricotta

Steps
First, clean the broccoli and divide them into florets. Rinse them very well under water and place them in the steamer basket. To cook the broccoli, you can choose the traditional method in a pot with plenty of salted water, or in the pressure cooker or instant pot.
For cooking in a traditional pressure cooker, you will need to place the basket inside it, in which you have also added some water. Then close the pot and bring it to full power. From the beginning of the whistle, cook the vegetables for 5 minutes. After the cooking time, gradually release the steam and open the pot.
For cooking in the electric pressure cooker, put about 250 ml of water inside the pot. Then place the basket with the cleaned vegetables and close with the lid. Set on “pressure cook” and set 9 minutes of cooking time. Then gradually release the steam and open the pot.
Then let the broccoli cool for a few minutes, then transfer them to a bowl and mash them with the tines of a fork. Then add the eggs, ricotta, grated cheese, salt, and pepper. Mix until a homogeneous mixture is obtained.
Lay the parchment paper in the baking dish, pour the mixture of eggs with vegetables and ricotta, and distribute it evenly over the entire dish. If you wish, you can also make a decoration on the surface by gently passing the tines of the fork to form lines.
Finally, bake in a fan oven at 356°F for 25 minutes or until the surface is golden. The broccoli and ricotta frittata is ready! Serve it still hot by cutting it into slices.
