Ingredients
- 3 potatoes
- 8.5 oz red cabbage
- 1.4 tbsp extra virgin olive oil
- 0.25 cup rice flour
- salt (to taste)
- pepper (to taste)
- paprika (to taste)

Steps
First, cook the potatoes in the pressure cooker. You can use the Instant Pot or the traditional pressure cooker. Wash the potatoes very well under water and place them in the steamer basket. Then put some water in the pot, then the basket with the potatoes, and cook them for 6 minutes from the start of the whistle. For the electric pressure cooker, set the button for pressure cooking and cook the potatoes for 9 minutes. Alternatively, you can cook them in a saucepan with plenty of water for 20 minutes.
Separately, clean the red cabbage by removing the more damaged outer leaves and cut it into strips. Wash it very well under water and drain it. Put some oil in a pan and cook the cabbage for 10 minutes, seasoning with salt, until it is wilted.
Peel the potatoes and mash them with a potato masher. Also, add the cooked and cooled red cabbage and mix. Now add the rice flour, paprika, salt, and pepper and mix again until all the ingredients are combined.
Take a bit of the mixture and form patties, flattening them slightly with your hands. Now place the patties in the air fryer basket with parchment paper, add a little oil, and cook at 375°F for 15 minutes, turning them halfway through cooking.
As an alternative to the air fryer, you can also cook the patties in a pan with a little oil for 3 or 4 minutes on each side.
The potato and red cabbage patties are ready! Serve them warm with a salad.

The patties can be stored in the refrigerator for one or two days at most in a container with a lid.
