Ingredients

  • 2 cups pumpkin
  • 8.5 oz sausage
  • 2 cups potatoes
  • 1.41 tbsps extra virgin olive oil
  • rosemary (as needed)
  • salt (as needed)
  • pepper (as needed)

Steps

  • First, clean the pumpkin by removing the seeds and skin, and cut it into cubes. Then peel the potatoes and wash them very well under water. Pat them dry with some paper towels and cut them into cubes, more or less the same size as the pumpkin.

    Then transfer to a bowl, add salt and mix with your hands to distribute it evenly over the vegetables. Then remove the casing from the sausage and cut it into pieces about 3/4 inch in size.

    Then put pumpkin, potatoes, and sausage in a baking dish, add the oil, rosemary, and a sprinkle of pepper, and bake in a static oven at 356°F for 15 minutes, then for another 10 minutes with the fan on. They should be well browned on the surface.
