I always make a double batch so that, besides preparing dessert, I also make lunch or dinner by filling them with a savory filling. If you want a less caloric dessert, you can fill them with jam, ricotta with powdered sugar, or even fresh fruit quickly sautéed with brown sugar. Bringing sweet crêpes to the table is always a joy, but Nutella crêpes, thanks to the super delicious filling, are even more so. Ingredients for Nutella Crêpes

  • 3 Eggs
  • 1 cup Milk
  • 1 cup Flour
  • 1.5 tbsp Butter
  • 1 pinch Salt
  • 1 pinch Ground cinnamon (optional)

  • to taste Hazelnut crumbs

Preparation of the Batter

  • In a bowl, beat the eggs with the salt and cinnamon. Add the milk, melted butter, and flour, and work the mixture with an immersion blender or a whisk to obtain a smooth and homogeneous batter. Let it rest for 10 minutes.

  • In a lightly greased flat-bottomed non-stick pan, pour small amounts of the mixture. Swirl the pan to ensure the mixture covers the entire bottom. Cook for a couple of minutes on each side and set aside. Continue until the batter is used up.

  • Warm the Nutella in a bain-marie to make it softer. Fold each crêpe in half, forming a half-moon. Spread each crêpe with the slightly softened Nutella from the bain-marie and roll up to form a cannolo. Serve decorated with more Nutella and hazelnut crumbs, adding a crunchy note.

You can store the crêpes in the fridge well-covered with plastic wrap to keep them from drying out. Fill them just before serving.
