Ingredients
- 12 oz ground chicken
- 1 egg
- 1/4 cup g breadcrumbs
- 1/4 cup g Parmesan cheese
- salt (to taste)
- pepper (to taste)
- 1 hot chili pepper (small)
- 1/2 onion
- 1 clove garlic
- 2 tbsps g extra virgin olive oil
- 2/3 cup ml coconut milk
- 1 tsp g curry
- 1 tsp g ground ginger
- all-purpose flour (as needed)

Steps
To prepare the curry meatballs, start with the preparation of the meatballs. Put the ground chicken in a bowl and add the egg, grated Parmesan, breadcrumbs, salt, pepper, and chopped parsley. Mix all the ingredients well first with a spoon and then with your hands until you obtain a homogeneous and compact mixture.
Then take some of the mixture with your hands and form round meatballs the size of a walnut. Then put some flour on a plate and flour the meatballs well, making sure to remove excess flour.
Meanwhile, clean a clove of garlic, remove the less digestible inner part, and chop it finely. Also, chop half an onion and a small chili pepper. Then put the oil in a pan, add the chopped onion, garlic, and chili pepper, and sauté them for a few moments. Then add the ground ginger and continue to sauté for a few minutes until the onion is slightly golden.
Then add the meatballs, brown them on all sides, and cook them over low heat for about ten minutes with the lid on, making sure to turn them occasionally. In the meantime, pour the coconut milk into a bowl with the curry and mix until well combined. Add these ingredients to the meatballs and stir. Continue cooking for a few moments over medium heat until you have obtained a delicious creamy sauce.
The curry meatballs are ready! Add some chopped parsley and serve.
