Apple and Walnut Cake without Butter, Quick and Full of Apples

If you’ve tried the soft apple cake, then you can’t miss this version: the apple and walnut cake. Very easy and quick, with lots of apples in the batter and no butter. In short, a delicious and light dessert, perfect for everyday breakfast or snack. A batter prepared with ingredients we all have in our pantry: eggs, sugar, flour, and milk. I then enriched the batter with white chocolate chips and on the surface, instead of the glaze, I added walnuts.

A very simple recipe, where the use of electric whisks is not necessary. Indeed, it will be enough to work the ingredients with a spoon. To avoid lumps, I used a hand whisk. It really takes just a few minutes to prepare, and you can also substitute the walnuts and chocolate with other ingredients to your liking. A cake with lots of apples and little batter, but that melts in your mouth because it’s so delicious.   • 2.5 oz all-purpose flour

  • 2 apples
  • 2 oz walnuts
  • 1.8 oz white chocolate chips

Steps

  • To prepare the apple and walnut cake, first break the eggs into a bowl, add the sugar and oil, and start mixing with a hand whisk until all the ingredients are well combined.

    Then incorporate the flour, baking powder, and milk and continue mixing with the whisk to obtain a smooth, lump-free batter. Separately peel two apples, cut them in half, remove the core, and slice them very thinly.

    Next, pour the apple slices and white chocolate chips into the batter and mix with a spoon or spatula until well combined. Line a 20 cm springform cake pan with parchment paper and pour in the batter. Level the surface well and sprinkle coarsely chopped walnut kernels.

  • Finally, bake the cake in a static oven at 350°F for 55 minutes, performing the toothpick test to check the baking before removing it. Once baked, let the cake cool in the oven with the door slightly open. Then remove it from the pan, and the apple and walnut cake is ready to be served.
