Quick and Delicious Crispy Skillet Potatoes

The crispy skillet potatoes are a quick and tasty side dish ideal for accompanying meat and fish main courses. Potato side dishes, no matter how they are prepared, are always a hit with everyone, young and old, but prepared this way they are truly delightful. Of course, the way I cook potatoes is always the same as my oven-baked potatoes: working them with salt before cooking. This way, they become super crispy on the outside and soft on the inside. I flavored them by adding fresh rosemary, but even dried rosemary will work just fine. Additionally, if you like, you can also add a clove of garlic in its skin, which you can remove at the end of cooking. Well, the recipe is quick and simple to prepare. What do you say, shall we prepare it together? Then follow me into the kitchen because the crispy skillet potatoes will be ready in a click!

Ingredients

  • 1.42 lbs red potatoes
  • 1.41 tbsp extra virgin olive oil
  • salt (to taste)
  • rosemary (to taste, fresh)

Tools

  • Skillet
  • Cutting Board
  • Knife
  • Peeler
  • Bowl

Steps

  • To prepare crispy skillet potatoes, first clean them by removing the peel with a peeler or a knife. Then wash them thoroughly under water to remove all impurities and dirt. Dry them with kitchen paper and cut them into fairly small pieces. This way, they will cook faster.

Then transfer the potatoes to a bowl, add a small handful of salt, and mix them with your hands to ensure the salt is well distributed on all the potatoes. This step is crucial for obtaining potatoes that are crispy on the outside and soft inside. Of course, during cooking, it will not be necessary to add more salt.

Then heat a non-stick skillet with oil, and when it is hot, add the potato pieces. Add the rosemary and cook over moderate heat without a lid for 10 minutes or until they are well browned and you can pierce the potatoes with a fork.

FAQ Questions and Answers for Crispy Skillet Potatoes

  • Can I use dried rosemary?

Yes, you can use dried rosemary or alternatively add a clove of garlic which you can remove at the end of cooking.

  • Why shouldn’t potatoes be reheated?

Cooked potatoes are best consumed immediately because they lose their crispiness. However, you can store them in the refrigerator for up to two days. Beyond this period, potatoes undergo an alteration process if, after cooking, they are placed in the refrigerator and then reheated again. These processes cause modifications in protein and nutritional structures and can consequently cause digestive disorders or food poisoning.
