Ingredients
- 2 eggs
- 3/4 cup sugar
- 1/2 cup plain yogurt
- 1 1/4 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/3 cup vegetable oil
- 2 apples
- 1/4 cup apricot jam
- sliced almonds (to taste)
- vanilla (to taste)

Steps
First, beat the eggs with sugar and yogurt using a hand whisk or an electric mixer. Then add the flour and the baking powder and mix again until well combined and you get a smooth batter without lumps. Then, score the vanilla pod with the tip of a knife and extract the seeds. Add them to the batter, along with the oil. Mix again until well combined.
Separately, clean the apples, remove the peel and core, and cut them into not too large cubes. Then add the apple pieces to the batter, mixing continuously. Next, line a 9-inch loaf cake pan with parchment paper and pour in the batter.
Then add the jam and sliced almonds on top. Bake in a preheated static oven at 350°F (175°C) for 45 minutes. Of course, baking times are relative and you should refer to the type of oven you own. To check if it’s done, perform the toothpick test: if it comes out dry, then the loaf cake is ready. Otherwise, continue baking for the necessary time.
The apple and jam loaf cake is ready! Once it has cooled, remove it from the pan, dust with a little powdered sugar if preferred, and it’s ready to enjoy.
