Ingredients
- 2 zucchini
- 5.6 oz fresh spreadable cheese
- 3.5 oz smoked salmon
- chives (as needed)
Tools
- Pan
- Cutting Board
- Knife
- Plastic Wrap
- Small Bowl
Steps
First, wash the zucchini, trim the ends, and slice them lengthwise into thin slices using a knife or a vegetable peeler. Then grill the zucchini slices on a hot non-stick pan for 2 or 3 minutes per side and let them cool.
Meanwhile, place the fresh spreadable cheese in a bowl and add the chives finely chopped with scissors or a knife. Mix well to blend the ingredients.
Now lay some plastic wrap on a work surface and place the zucchini slices on top, slightly overlapping them. You should form two rows. Spread the cheese mixture over the entire surface and lay the salmon slices on top. With the help of the plastic wrap, roll tightly from one end to the other to form a large roll.
Finally, cut the roll into pieces about 1 inch wide and serve, decorating with a few strands of chives if you prefer.
Variations and Tips for Zucchini Rolls
Zucchini rolls can be stored in the refrigerator for one or two days in a container with a lid. You can replace the chives with arugula and you can also replace the zucchini with eggplants.

FAQ (Questions and Answers)
How do I know if zucchini are fresh?
To determine their freshness, try bending them: the more flexible they are, the less fresh they will be because they’ve lost some of their water.
How can I prevent cut zucchini from turning brown?
If you need to use them a few hours later, you can put them in the refrigerator in a container with damp, wrung-out paper on top.
How long can I store cooked zucchini in the refrigerator?
Cooked zucchini can be stored in the refrigerator, regardless of the cooking method used. The most important thing is to store them in an airtight container with a lid or cover them with plastic wrap and consume them within one or two days at the most.
