Preparing these skewers is very simple! I used pre-cut veal bites, so I avoided the hassle of having to cut the whole piece into bites. Along with the veal, I used zucchini and potatoes: two vegetables usually more appreciated in the family. Of course, you can get creative and use peppers, eggplants, or cherry tomatoes.

Ingredients
- 7 oz veal (bites)
- 2 zucchini
- 1 potato
- 1/4 cup breadcrumbs
- 1/4 cup pecorino cheese
- 1.5 tbsp extra virgin olive oil
- salt (to taste)

- Parchment paper

Steps
First, wash the zucchini, remove the ends, and cut them into slices 1/2 to 3/4 inch thick. Then peel the potato and cut it into chunks. Transfer the vegetables to a bowl with the veal bites and add breadcrumbs and pecorino cheese. Mix and skewer one piece of meat, one piece of zucchini, and one piece of potato alternately. Continue this way until all ingredients are used. Then place the skewers on a baking tray lined with parchment paper and add a bit of oil.
Bake the skewers in a static oven at 350°F for 20 minutes and the last 10 minutes with the fan function.
Variations and Tips
The oven-baked veal skewers can be stored in the refrigerator for one or two days in a container with a lid. You can enrich the skewers by adding a bay leaf or paprika to the coating. Instead of zucchini and potatoes, you can use other vegetables you prefer.
