  • 2 3/4 cups Pasta
  • 5 oz Smoked salmon
  • 5 oz Robiola cheese
  • as needed Extra virgin olive oil
  • 1 clove Garlic
  • as needed Parsley

Preparation

  • Bring the water to a boil and add the pasta. Salt the water. Meanwhile, in a frying pan, sauté the garlic with a drizzle of oil. Remove the garlic.

  • Add the spreadable cheese (or Philadelphia or robiola) to the pan and stir to form a cream, using a bit of the pasta cooking water. If you want a more flavorful cream, blend half of the salmon intended for the recipe into the cheese cream.

  • Drain the pasta well al dente, keeping aside some cooking water. Mix it with the cream and pieces of salmon, chopped parsley, and if it turns out too dry, add the reserved water. Serve immediately.

Storage

I do not recommend storing the seasoned pasta, but bringing it to the table steaming hot right after cooking.
