- 1 1/2 cups all-purpose flour
- 1 1/4 cups coconut flour
- 3 eggs (157 g)
- 1/2 cup sunflower oil
- 3/4 cup sugar
- 3/4 cup coconut milk
- 2 1/2 tsp baking powder
- 1 lemon (grated zest)
- 1 pinch salt
- 3 1/2 oz chocolate (dark)

Steps for Coconut Cake with Chocolate
You can use an electric mixer or a stand mixer for this recipe.
Break the eggs into a bowl. Whip the eggs together with the sugar until you get a light and fluffy mixture. Gradually add the oil while continuing to mix, then add the coconut milk. Mix to combine these ingredients.
Sift the all-purpose flour and baking powder, add the coconut flour, grated lemon zest, and a pinch of salt. Keep mixing with the electric mixer.
When all the ingredients are well combined, add the chocolate. You can use chocolate chips; if you don’t have them, use a chocolate bar. Take the needed amount and, with a knife, chop it and add it to the mixture.
Pour the batter into a 9-inch springform pan lined with parchment paper. Bake in a preheated static oven at 320°F for about 50 minutes. After the cooking time, do the toothpick test to check if it is done.
Once cooked and cooled, you can decorate the cake with powdered sugar or, to make it even more delicious, melt some honey or jam of your choice in a saucepan and cover it with shredded coconut. Your dessert is ready to be enjoyed!
