I’ve been making several cookies lately, both for home and as gifts, because during the holidays I often put together assorted trays or a few bags of homemade sweets.
These pinecone-shaped cocoa cookies are simple 😍 to make and look great whether among other cookies or on their own. In short, they’re a cute idea for those needing to prepare something nice to bring or give.

Why this dough doesn’t need resting
It’s a soft cocoa shortcrust, not a classic tart shortcrust.
It has less butter compared to the flour → it doesn’t heat up and doesn’t soften.
It needs to be moldable immediately to shape into a pinecone.
The fridge would harden it too much and make it impossible to cut well.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 1/3 cup unsweetened cocoa powder
- 1 egg
- 1 tsp baking powder
- 1 tsp vanilla extract
- as needed powdered sugar

Steps
Beat the softened butter with sugar.
Add the egg and the VANILLA EXTRACT.
Then add the flour, cocoa powder, baking powder, and salt.
Knead until obtaining a soft and uniform dough that doesn’t need to be refrigerated for resting, no need!Take portions of 30g or at least that’s what I did!
Try to shape each portion into a drop/pinecone shape as I did.
Score the surface with crisscross cuts using a small knife.
Place the cookies on the parchment-lined baking sheet.
Bake in a static oven at 350°F for 10–12 minutes.The cookies should come out slightly soft in the center and harder on the edges.
Let cool completely.
Dust the cookies with powdered sugar to create the perfect snow effect for the winter period.Here they are ready for BREAKFAST and for making homemade gifts!
