The chicken salad is a perfect recipe for recycling and emptying the fridge. Last night I had some leftover rotisserie chicken that no one wanted to eat because it was too dry. So I thought of making a nice salad to consume it. Well… it disappeared in a flash!
For this preparation, I used fresh vegetables, but you can also use those preserved in oil. Alternatively to rotisserie chicken, you can also use chicken breast cooked in a pan or boiled. In short, a very quick recipe to prepare and therefore ready in a click! The chicken salad is also ideal as an appetizer, for a quick and light office lunch or for a picnic.

- 6.7 oz cherry tomatoes
- 1 red spring onion
- 1/2 yellow bell pepper
- 1 cup mixed salad greens

Preparation of the chicken salad
The preparation of chicken salad is very simple. I used leftover rotisserie chicken. However, you can also use any other type of meat you have available and need to consume. So let’s see how to prepare it immediately.
First, debone the chicken if you haven’t done so already, cut it into pieces, and set it aside. Then clean the spring onion and slice it. Also clean the bell pepper and cut it into strips and then into pieces. Next, wash the tomatoes, dry them with paper towels, and cut them into quarters.
Now transfer all the previously prepared ingredients into a salad bowl, also add the salad greens, and dress with oil, salt, and pepper.
The chicken salad is ready! Serve it as an appetizer or as a single dish.
Variations and tips
To prepare the chicken salad, you can also use other types of meat: for example, turkey. If you don’t have cooked chicken, you can steam it, grill it, or boil it and then prepare the recipe as explained.
Instead of fresh vegetables, you can also use mushrooms in oil, artichokes, or any other ingredient based on your personal taste and what you have in your pantry or fridge to consume.
If you prefer an even richer flavor, you can also add anchovy fillets.
You can finally enrich the dressing with balsamic vinegar glaze if desired.
The chicken salad can be stored for two or three days in the refrigerator in a container with a lid.
