The biscuitamisu is a dessert similar to tiramisu, which I prepared with pasteurized eggs in a carton that solve the problem of raw eggs, and it is also made with dry biscuits that add a crunchy note to this already delicious dessert. I prepared the cream that I generally make for my tiramisu, but if you have a tried and tested recipe, you can safely use that. If you want to prepare it for the little ones, replace the coffee with barley coffee or milk, and if you like, enrich it with chocolate chips that make it even more delicious.

- 1.7 cups Fresh liquid cream
- 6 egg yolks

Preparation
After preparing the coffee, let it cool. I don’t like to sweeten it, but if you prefer a sweeter taste, sweeten to taste. Whip the egg yolks with the sugar. I use pasteurized ones in cartons to avoid issues with raw eggs.
Whip the cream. Remember that it needs to be very cold to whip perfectly. Add the mascarpone. Continue working with the electric beaters until you obtain a thick foam. Now incorporate the yolks with a spatula or a hand whisk.
Assemble the dessert by alternating in a baking dish the biscuits soaked with coffee and the mascarpone cream. Sprinkle with unsweetened cocoa powder just before serving.
