Carnival park fritters are soft, flat, and round doughnuts that we used to eat as kids when we went to the rides. Who doesn’t remember the smell of these delights spreading in the air as we approached the cart selling them. In reality, they are quite easy to recreate at home and enjoy during the carnival period, but not only. I made a version with sourdough and I recommend trying it at least once because it’s finger-licking good. If you don’t have sourdough, make a dough with 10 g of brewer’s yeast, 50 g of slightly sweetened water, and 100 g of flour. Let the dough rest, and when it has doubled in volume, use it instead of sourdough.

  • 150 g sourdough
  • 4 cups all-purpose flour
  • 1/2 cup milk
  • 1/2 cup sparkling water
  • 4 tbsp sugar
  • 1 pinch salt
  • 4 cups frying oil

Preparation

  • Work the sourdough with the flour, milk, and water. If you don’t have sourdough, the introduction explains how to make it with brewer’s yeast! Add the sugar and then the salt. Work until you get a smooth dough that we put in a container, cover with a cloth, and let rise until it doubles in volume.

  • Turn the dough onto a floured surface and divide it into 12 balls. Let them rest for 30 minutes. At this point, with your hands, shape the balls into discs with a thicker edge along the border.

  • Heat the oil. When it’s hot, you know it’s perfect if dipping a toothpick creates small bubbles. Dip the carnival park fritters. Fry, turning halfway through to brown both sides. Drain on absorbent paper and roll in granulated sugar.
