They are a dive into the past, the smell of family Sundays, and the sound of laughter in the kitchen. In fact, these are the cookies Grandma Teresa made, and she kindly provided me with the recipe.
This recipe is designed even for those with little kitchen experience, they are really simple to prepare, and the result is guaranteed.

Ingredients
- 2 cups all-purpose flour
- 7 tbsps butter (cold)
- 1/2 cup sugar
- 1 egg
- 1 egg yolk
- to taste lemon zest
- to taste jam
- 1 pinch salt
- 1 tsp baking powder

How to Prepare Shortbread and Jam Stars
In a bowl, mix the flour and baking powder with the cold cubed butter and a pinch of salt. Work quickly with your fingertips until you get a sandy, crumbly mixture.
Add the sugar and the grated zest of an untreated lemon. Mix briefly.
Add the whole egg and the yolk. Knead with your hands until you get a compact and homogeneous dough.
Wrap the dough in plastic wrap and let it rest in the refrigerator for at least an hour.
Lightly flour the work surface. Take the shortbread and roll it out with the rolling pin to a thickness of about 1/8 inch.
Use a star-shaped cutter to cut out the cookies. Half of the stars should be whole (these will be the base of the cookie). The number of cookies depends on the size of your cutter and the thickness of the shortbread.
In the other half of the stars, make a small central hole (perhaps with a smaller star cutter, or a simple round one) that will serve to show the jam.
Place the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 350°F for about 10 minutes.
Remove from the oven and let cool completely on a wire rack.
Dust the cookies with the central hole with plenty of powdered sugar.
Take the whole star cookies (the bases) and put a teaspoon of jam of your choice in the center.
Close the cookies by pairing the base with the dusted and holed star, being careful not to let the jam spill out.

Storage
At room temperature, the cookies will keep for 4 days. Shortbread cookies can be frozen once baked and cooled. Place the cookies in a container or freezer food bag, separating the layers with parchment paper to prevent them from sticking. Then let them thaw slowly at room temperature.
