How to Prepare the Savory Pie with Sausages and Zucchini

  • Remove the casing from the sausage and crumble it into the non-stick pan. Cook over medium heat for about 5-7 minutes, stirring often until golden and evenly cooked.

  • Transfer the sausage onto paper towels and let it cool.

  • Wash and trim the zucchini, then cut them into small cubes. In a pan, heat a little oil and sauté the zucchini over high heat for about 8-10 minutes. Add salt to taste. The zucchini should be soft but not mushy. Once ready, turn off the heat and let cool.

  • Roll out the puff pastry in the 10-inch pan (keeping the parchment paper underneath). Prick the bottom with a fork.

  • Evenly distribute the cooked zucchini, sausage, and cubed cooked ham on the pastry.

  • Cover everything with slices of Emmental cheese. Then add more sausage.

  • In a bowl, mix the egg well with the tablespoon of Philadelphia and salt.

  • Pour the egg and cheese mixture over the filling, making sure it penetrates well among the ingredients.

  • Fold the edges of the puff pastry inward and add a drizzle of oil.

  • Bake the savory pie on the middle rack and cook for about 25 minutes. The puff pastry should be golden, and the filling firm.

  • Remove from the oven and let cool for 5 minutes before serving.

Storage

Store the cooked savory pie in an airtight container for 2-3 days. It is recommended to reheat it in a static oven at 300°F for a few minutes before serving to make the base crispy again. It can be frozen cooked and cooled, wrapped in plastic wrap and then in aluminum foil. Defrost in the refrigerator and reheat in the oven.

FAQ (Frequently Asked Questions)

  • Can I replace the cooked ham?

Being a fridge-clearing recipe, you can use any cooked or to-be-cooked cold cuts. Great alternatives are pancetta, cubed speck, or mortadella.

  • What can I use instead of sausage?

If you want a less intense flavor, you can replace it with ground meat. Alternatively, for a lighter or vegetarian version, use mixed mushrooms.

  • Can I use other vegetables instead of zucchini?

Certainly. Broccolini, spinach, bell peppers, or cooked squash are all good options.

  • What cheese can I use instead of Emmental?

Any melting cheese will do. You can use smoked scamorza, fontina, or mozzarella.
