- 3 pears
- 7 oz feta
- 1 tablespoon extra virgin olive oil
- 1 lemon (juice)

Let’s start preparing the zucchini and pear salad: wash and dry the zucchini, slice them thinly with the mandoline.
Wash and dry the pears and slice them thinly; then drizzle them with filtered lemon juice.
Squeeze the lemon and filter the juice, add extra virgin olive oil, a pinch of salt, pepper and pink peppercorns and emulsify everything until you get a sauce.
Pour the zucchini and pears in a salad bowl and add diced feta.
Drizzle with the oil and lemon emulsion.
Mix carefully and let marinate in the fridge for about 1 hour.
