Steps
Peel and dice the apples.
Pour the oil into a pan, add the sugar, then the apples and vanilla. Cook for 5/6 minutes or until the cubes are soft.
Transfer the apple cubes to a bowl and add the chopped pistachios and mix. Allow them to cool slightly before using.
Unroll the puff pastry (unfortunately I couldn’t find the rectangular one) and cut out the bases using the pastry cutter. Cut the center of the round shapes that will go on top using flower or heart-shaped cutters. With the pastry scraps, make the leaves and stems of the apples.
Moisten the edges of the bases with a little milk and fill with a spoonful of apples. Also add the leaves and stems to each base, pressing lightly.
Close each “apple” with the disc cut out in the center and, with a fork, seal around the edges. Brush the surface with a little milk, optionally sprinkle with some brown sugar, and bake in a hot oven at 350°F for about 20 minutes. Serve hot, warm, or cold.
Tips:
Serve them warm with a scoop of ice cream or custard: they will become a patisserie dessert.
