Pistachio overnight porridge is a delicious breakfast recipe: very easy to make, you prepare it in the evening, keep it in the fridge, and in the morning it is ready to enjoy. I actually love hot breakfasts, always, even in summer, but pistachio overnight porridge is so good that I am happy to make it even in winter. Less often, to be honest, but it fits every now and then.

Ingredients
The amounts may be sufficient for one or two people depending on how much you eat. With this, I make breakfast for two days.
- 1/2 cup small rolled oats
- 2.7 tbsp milk (or plant-based drink)
- 1/3 cup milk (or plant-based drink for frothing)
- 1 tbsp 100% pistachio cream
- 1 tbsp chia seeds
- 5.3 oz Greek yogurt
- to taste chopped pistachios
Tools
- 1 Bowl
- 1 Spoon for mixing
- 1 Cup with lid
- 1 Frother
Steps
In a bowl, pour the rolled oats and chia seeds. Add the Greek yogurt, the 2.7 tablespoons of milk or plant-based drink, and mix well. Froth the remaining milk and add it gradually to the mixture. Pour the porridge into a cup or container with a lid and store in the refrigerator for a few hours or overnight.
Optionally, you can add some chopped pistachios before enjoying it for breakfast. You can sweeten it with honey or another sweetener of choice to make your porridge sweet. I personally never add anything. I prefer it natural.
