The lemon scallops are a great classic in our cuisine, a simple, tasty, and very easy recipe to make. It only takes a few minutes to serve a tasty and delicious second course. It’s the ideal recipe when you’re short on time but still want to cook something appetizing. Excellent accompanied with a side of vegetables (for example, I love them with broccoli rabe sautéed in a pan with oil and garlic), the lemon scallops are truly delightful. You can use chicken, turkey, veal, or pork depending on what you have at home or what you prefer.

Ingredients
- 6 slices pork loin slices (or chicken breast)
- 1/4 cup butter
- 1 lemon
- 1 bunch fresh parsley
- 4 tbsps flour
- 1/4 cup white wine
- to taste salt

Steps
Pound the pork slices and flour them. Melt the butter in a low-sided saucepan, add the meat slices, and cook for three minutes, turning them halfway through. Season with salt and deglaze with white wine. Let it evaporate, then add the lemon juice, chopped parsley, and cook for a few seconds. Transfer the scallops to the plate with the sauce and serve immediately.
