Ingredients
- 3 eggs
- 1.25 cups sugar
- 2/3 cup plain Greek yogurt
- 1/4 cup rice oil (or another seed oil of your choice)
- 1/2 cup milk
- 2.5 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 packet baking powder

- 1 Toothpick Cake tester
- 1 Cooling rack
Steps
In the mixer bowl or with an electric mixer, beat the eggs with the sugar until light and fluffy, then add the rice oil or another seed oil of your choice and incorporate the yogurt. Add the flour and milk, continuing to mix, then the sifted cocoa. Also add the vanilla extract and baking powder. Mix until you have a smooth and homogeneous batter and all the ingredients are well combined. Transfer the batter into a greased and floured 10-inch mold, but if you have a mold like mine with many grooves, it’s better to use release spray. Bake in a preheated oven at 356°F for 40 minutes. Check the cooking with a skewer or cake tester, which should come out dry. When the cake is done, remove it from the oven and the mold and let it cool on a rack before slicing it.
