Ingredients

How many pancakes will this recipe make? Good question since I forgot to count them! I would say about twenty mini pancakes.

  • 1 oz oat flour (cookie-flavored)
  • 1.8 oz plain Greek yogurt
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 tablespoon brown sugar (only for classic oat flour)

Steps

Before starting: the cookie-flavored oat flour, chocolate-flavored or whatever you prefer, I think it’s also available in lemon cake flavor, is already sweet, so I didn’t add sugar. But if you use classic oat flour, you can choose whether to keep them natural or add the sugar listed among the ingredients.

  • Prepare the batter: In a bowl, using a whisk, mix the Greek yogurt with the egg, then add the flour, working the mixture well to avoid lumps. Mix everything well to get a smooth and homogeneous mixture. Heat the pancake griddle (the one I use is currently not available, but you can achieve the same result with this electric mini pancake maker or arm yourself with patience and use a pan to manually form the small mini pancakes). Grease the pan with a little oil and pour a heaping teaspoon of batter. Bubbles will start to form on the top of the pancakes, and the batter will begin to dry. At this point, use a spatula to flip the pancakes and cook them on the other side. Continue until all the batter is used up.
