  • In the chopper’s cup, place the anchovies, vinegar, oil, and garlic. Blend until the mixture is smooth with the anchovies fully incorporated into the rest of the ingredients.

  • Divide the drained and well-dried chicory shoots between the two plates.

  • On top of the chicory shoots, slice the artichoke with the mandoline, dividing it half per plate. Season with a pinch of salt (remember the anchovies are quite salty).
