Ingredients for 2 people

  • 1 cup g Carnaroli rice
  • 3.5 oz g bacon
  • 3.5 oz g porcini mushrooms
  • 4 cups l vegetable broth (with porcini mushrooms)
  • 2 tbsps g butter
  • 1/4 glass dry white wine
  • to taste salt

Procedure

The recipe for a good risotto is very simple, firstly don’t underestimate the toasting and secondly, if you want a good risotto, you need to have good ingredients and a good broth.

  • In some years, the cost of porcini mushrooms can be significant, so I recommend treating this raw material with great care.

    The secret of a good risotto with porcini mushrooms and bacon lies in the flavor of the porcini mushrooms, which is obtained using porcini broth.

  • For an aromatic porcini broth, I recommend adding 7 oz of porcini mushrooms to 6 cups of water and simmer until reduced to about 2/3, season with salt and keep warm.

    These porcini will be very cooked, but they should not be thrown away; we will use them for our risotto diced or for a delicious soup.

  • Now cut the bacon into uniform cubes and sauté in a hot pan to release the fat.

    When the bacon is browned, add the rice, heat and toast for a couple of minutes, and when the rice is hot, deglaze with the white wine.

    Add the hot porcini broth one ladle at a time until cooked.

  • Cook the rice for the time indicated on the package, approximately 13-17 minutes.

    Two minutes before the end of cooking, remove the risotto from the heat and stir in the butter and diced porcini (those used for the broth) away from the stovetop.

    When cooking is complete, let the risotto rest covered so that it can absorb the excess broth; after a couple of minutes of resting, you can serve.

    Your risotto with porcini mushrooms and bacon is ready!

This is a simple dish, arrange the mushrooms and bacon so that they are visible on top of the risotto. You can finish the dish with a sprinkle of pepper.
