Making fior di latte ice cream at home with an ice cream maker is easy and quick, just a few ingredients and it’s as good as the one from the gelateria.

Ingredients for 4 servings
- 1.75 cups whole milk
- 5/8 cup heavy cream
- 1/2 cup sugar
- 1.4 oz powdered milk

Procedure
Ice creams are a form of pastry, weigh all ingredients precisely for the best possible result.
Put the milk and cream in a large saucepan and bring to a boil, this step is used to pasteurize the milk and make it safe to consume.
If you have a kitchen thermometer, the ideal is to exceed 140°F, if you don’t have one, remove the saucepan from the heat once it starts boiling.
At this point, add the powders to the saucepan, first the sugar and then the powdered milk, make sure no lumps form, use a whisk to help you.
If lumps form, DO NOT use a blender because the mixture would incorporate air and you would end up with whipped, foamy milk, simply pass it through a fine mesh sieve.
Let the mixture rest in the fridge overnight, this is called maturation and is the secret for a fragrant and flavorful ice cream. Additionally, a cold mixture takes less time to churn in the ice cream maker.
Put the cold mixture in the ice cream maker and activate the ice cream dedicated program. I use the Gelato Expert by Magimix, an ice cream maker with a double basket, in 20-30 minutes the ice cream is ready.
You can serve it directly or put it in airtight containers in the freezer, the ice cream can be stored in the freezer for up to a week.
Take it out a few minutes before so that it isn’t too cold and can be worked for cones or cups!

I recommend serving it with scoops and completing the cup with crunchy and delicious ingredients like chopped hazelnuts, pistachios, syrupy fruit, or corn flakes.

It’s a sweet and creamy milk flavor, I recommend an aromatic white wine like a moscato, my favorite is Moscato d’Asti Dolce DOCG.
