- 2.2 lbs pork shoulder
- 4.2 cups water
- 5.3 oz salt
- 1.8 oz sugar
- 2 tbsps mustard
- 1 tbsp sugar
- 1 tbsp salt
- 2 tbsps sweet paprika

Procedure
BBQ pulled pork is made with a special cut of meat that is quite hard to find here. You can use pork shoulder or collar instead.
First, you need to marinate the meat with the brine, it’s a very simple process, mix the water with the salt and sugar. Heat gently to aid dissolving, when cool, immerse the meat for at least 12 hours.
Let everything rest in the fridge; it’s important that the meat is completely submerged in the liquid and absorbs it gently.
The next day, remove the shoulder from the brine, dry it well, and coat it with mustard on all sides.
Now let’s prepare the seasoning that will flavor the meat during cooking. In English, it’s called a rub, and it’s a mix of all the dry ingredients.
Coat the shoulder in the rub so that it is completely covered on every side.
Preheat the oven to 320°F and bring to temperature. When the oven is hot, place the shoulder in a baking tray covered with aluminum foil.
Pierce the foil to allow moisture to escape from the tray.
Cook for 3 hours and 30 minutes, remove excess liquid keeping it aside, and grill at 464°F for 20-30 minutes to form a crispy outer crust.
Remove the pulled pork from the oven and start pulling the meat apart (hence the name) with two forks until you get flavorful meat shreds.
Your oven-baked pulled pork is ready!
