Procedure
This is a simple dish with premium ingredients. Follow the instructions to cook them well and enhance them in a very tasty and flavorful dish.
First, clean the mushrooms thoroughly, removing any soil on the porcini and the white membrane that may still wrap the Caesar’s mushrooms.
Mushrooms should never be washed with water to avoid washing away the flavor. Use a knife or a spoon to remove soil accumulations.
If the mushrooms are particularly dirty with soil, you can help clean them with a damp cloth or moistened paper towel.
After cleaning the mushrooms, cut them into thin slices. Since these are fresh mushrooms, precision is not necessary, but it’s important they have uniform thickness so they cook evenly.
Put a drizzle of oil in a pan and sauté the mushrooms until they are well browned on all sides. Add the cherry tomatoes at the last moment so they don’t release water that would make the mushrooms soggy.
Keep the pan covered so the tomatoes soften and are ready to toss with the pasta.
Put the water on the stove and bring it to a boil. Cook for the indicated time and drain 2 minutes before the end.
Toss the pasta in the pan with the mushrooms, adding a couple of tablespoons of cooking water until the pasta has combined well with the mushrooms.
Once the spaghetti with porcini and Caesar’s mushrooms are cooked, add the finely chopped parsley. To enhance the flavor, add it off the heat. The pasta’s warmth will enhance the aroma and taste.
