Procedure
Remember that shrimp, even fresh ones, should never be consumed raw. The health ministry suggests freezing them; if you don’t have a blast chiller, freeze them in your home freezer for at least 96 hours before consuming.
The cleaning method varies depending on the type of shrimp or prawns you are going to use.
Do not rinse the shrimp under water, as this would wash away the sea flavor, a real shame given the precious raw material.
If you are using fresh shrimp, you can proceed with cleaning them and then freeze them clean. If you are using frozen shrimp, you must thaw them first and then clean them. Remember that once thawed, they can no longer be refrozen.
If you are going to use headless shrimp, I recommend removing the shell (outer rings) completely and leaving only the tail for handholding.
In this case, to remove the intestine you have two options, the first is the butterfly cut, cut the crustaceans along the back and using a toothpick, remove all impurities. Use paper towels to remove any more adherent parts.
This preparation is also excellent for shrimp served with sauces or for mixed fried dishes.
If instead you want to keep the shrimp with the shell, you can remove the internal vein by pulling it from the central body.
Place the shrimp straight and with slight pressure, pull out the internal filament taking care not to break it. If it breaks, you will need to cut the back to remove the remaining part.
For other preparations, you might be interested in serving the shrimp with the head. Here’s how to clean it. Even in this case, you can apply a cut on the back and remove the vein entirely. For example, I use this technique for shrimp with lard or battered shrimp where the cut is not visible
Alternatively, if you need the shrimp to present in its entirety, I recommend making small incisions on the back between the shell rings and removing the vein from there.
In this way, you will have a whole shrimp with the shell but cleaned internally.
