Ingredients for 4 people
- 1 cup oz mascarpone
- 2 eggs
- 6 tbsp oz sugar
- 10 ladyfingers (thin)
- 10 amaretti
- 1 3/4 cups oz caramel (salted)
Tools
- 2 Bowls
- 1 Mixer
- 2 Piping Bag
- 1 Spatula
Procedure
To make the best salted caramel tiramisu, you must follow the recipes to make the creams, here are the tips and suggestions.
First, we will make the delicious mascarpone cream that will be the base of the dessert.
Start by beating the sugar with the electric mixer yolks and eggs until you get a frothy cream.
Mix the mascarpone with the remaining sugar and then add half of the beaten egg, avoiding deflating the mixture. When the cream is dense, add the remaining part.
Once the cream is ready, let it rest in the refrigerator so that it reaches an ideal consistency.
Make the coffee and let it cool while you prepare the salted caramel following the instructions you find here.
To assemble your salted caramel tiramisu, you just need to dip the thin ladyfingers quickly in the coffee, being careful to be very quick. The thin ladyfingers are thinner than the classic ones and absorb the coffee faster.
Place a layer of soaked thin ladyfingers, crumbled amaretti, and another layer of ladyfingers. Add a layer of lodigiana cream with a thickness of 3/4 inch and then a layer of 1/4 inch of salted caramel.
Work on the layering; the ideal is to have at least 2 levels of everything.
Complete the dessert with a light layer of lodigiana cream, salted caramel, and crumbled amaretti.
Your salted caramel tiramisu is ready!
Plating Tips
For an elegant presentation, serve this dessert in individual servings of 4-5 inches so each guest has their portion to enjoy.
Tiramisu Wine Pairing
Tiramisu is difficult to pair with wine; the salted caramel version even more so. I recommend serving it with a good coffee.
