Ingredients for 2 people:

  • 6 oz pasta (short of choice)
  • 7 oz chickpeas
  • 4 cups vegetable broth
  • 1/2 white onion
  • to taste tomato paste
  • to taste whole peppercorns
  • 1 tbsp extra virgin olive oil

Preparation

Here are the recipe and steps to follow to make creamy pasta and chickpeas easily and quickly.

  • First, cook the chickpeas, but if you’re using canned chickpeas, remember to drain them well and remove the canning water as it’s less digestible.

    To cook chickpeas, read the instructions you find here.

  • In a pot, sauté the chopped onion in a drizzle of oil. When it’s sweated (almost translucent), sauté the chickpeas over medium heat for a couple of minutes.

    Add the broth and a tablespoon of tomato paste and bring to a boil until the broth has thickened (about 10 minutes).

  • Tip: for an even creamier pasta, blend half of the chickpeas and add them to the broth.

  • When the sauce boils, add the pasta and rosemary, and cook according to the package instructions (about 7/10 minutes).

    At the end of cooking, mix well, adjust salt, pepper, and a drizzle of extra virgin olive oil.

  • Your creamy pasta and chickpeas are ready!

Plating Tips

Before serving the pasta and chickpeas, I recommend a sprinkle of pepper and a drizzle of raw extra virgin olive oil. Complete everything with some homemade rustic bread toasted on the grill, or the creamy pasta and chickpeas will be wasted!
